Hot spring days in Oregon

This week it has been extraordinarily hot for spring here in Oregon yes I know its only been in the upper 70's lower 80's but for us Oregonians that is like 100 degrees especially in April we usually don't get this kind of weather until the end of June.Any way this heat wave that we are going through right now has brought out some of my favorite salad recipes because I don't want to make the apartment any hotter than it already is...so I thought I would  share them with you

Spinach Pasta Caesar Salad

1 bag of baby spinach
1 bottle of Caesar dressing
1 box of bowtie pasta
2 chicken breasts

bake chicken breasts at 350 for about an hour. cut into bite size pieces then mix all ingredients together.

Tuna Macaroni Salad

1 can (9oz) Tuna
1 box of elbow macaroni
1 c mayo
1/4 sweet relish
1/4 tsp pepper
3/4 tsp salt
half an onion diced
1 stalk of celery diced

cook macaroni according to box. mix all ingredients together refrigerate for at least an hour before serving. I like to make it in the morning and then let it sit in the fridge all day and have it for dinner.

Wedding Plans and Screaming Boys

This weekend I took a weekend away from school and spent it with my sister, her fiance, and his two kids. We worked on some wedding details, like my entire family went to the boot barn and we found boots that we liked, then save the dates were worked on and ready to send out today. My sister and mom also worked on name plates for the tables. After boot shopping we went to find a vale and head piece, also pick up the flower girl dresses. Then on Sunday we took Jillie one of the bridesmaids, bridesmaids dress shopping and finally decided on a dress finally! No more of that stress. well thats it for now have to get ready for class.

Busy day...Lazy night

So today was interesting, I got a call from my mom who then handed the phone over to a fellow employee who then offered me a job, the job I have worked toward my entire Boy Scout Career, but I was caught so off guard that I didn't know what to say. I finally calmed down after talking to my mom, dad, and sister and just thinking about it and I will be the Gilbert Ranch Head Wrangler!!!! So excited!

The we had some team bonding which was not as bad as I thought it would be which was good and then we went bowling as a team which was a blast but now I have a headache so that kinda sucks but it is all good because it was well worth it.

To end my day I'm sitting here on my couch with my roommate watching NCIS, eating dinner and waiting to go hang out with one of my good friends Denell. :)  

Feeling Stuck

Lately I have been feeling like nothing is working out for me and am just ready to move on with life but can't yet (mostly because I am not done with school). Not that I regret coming to Oregon State because I try to never regret anything, my philosophy is never regret, just learn from mistakes and move on. But I have not been happy being here since my first term here, last year was because I didn't really have any friends, this year because well I'm not really sure because I have a few really good friends here this year who we have a blast hanging out relaxing and havin a good time. Maybe its the location, maybe its the school I don't know but I'm really tired of feeling this way, it really sucks. I see many of my friends moving off working at ranches, barns, anything they can get to have a job and sometimes I wish I was them having the strength to just go for it quite school full time and maybe drop down to part time and just go put myself out there and do something I love. Well that's it now I have to get ready to go to class...Have a good day.
